dc.description.abstractLas enfermedades alérgicas son en la actualidad un grupo de enfermedades inflamatorias altamente prevalentes. Afectan a casi un cuarto de la población mundial y generan altos costos a los servicios de salud. En nuestro país diversos estudios muestran una tendencia similar. Una de las hipótesis que trata de explicar este fenómeno es la de la dieta. El cambio de patrones dietarios, ancestrales y rurales, caracterizados por mayor consumo de frutas y vegetales, así como un estilo de vida rodeado de mayor biodiversidad y microbios a uno más occidental, sedentario y con consumo de azucares y pocas frutas y vegetales, ha sido responsabilizado en generar un estado proinflamatorio inductor de una respuesta alérgica. Una de las moléculas mejor estudiadas y presentes en gran cantidad en alimentos propios de la dieta occidental como papas fritas, hamburguesas, etc. son los AGEs (Productos finales de glicación avanzada), estos se generan por la cocción de los alimentos a altas temperaturas y poca humedad, actúan sobre receptores (RAGEs) presentes en las células del sistema inmune e inducen señales de activación. De otra parte, también actúan como antígenos al inducir una respuesta de anticuerpos. En el presente proyecto pretendemos establecer si la respuesta inmune de IgE podría tener algún papel en enfermedades tales como la rinitis alérgica. Para este estudio, utilizaremos muestras de pacientes ya clasificados en la seroteca del instituto; la reactividad hacia los AGEs se determinará por ELISA y el antígeno se obtendrá mediante la glicación de la albumina bovina sérica (BSA). Los datos se analizarán por diversos métodos estadísticos. Con los resultados obtenidos esperamos contribuir al conocimiento de las posibles causas de las enfermedades alérgicas, así como buscar mecanismos de ayudar a mejorar la calidad de vida de los pacientes que la padecen.es
